Apple Stuffed Acorn Squash

2  acorn squash
2 cups unsweetened applesauce
½ cup raisins
¼ cup liquid honey or molasses
¼ cup chopped walnuts
1 tbsp butter or margarine
1 tbsp grated lemon zest
2 tsp lemon juice
¼ tsp ground cinnamon

Preheat oven to 375°F (190°C).

Cut squash in half; remove seeds. Combine applesauce, raisins, honey and walnuts. Fill squash with mixture; dot each squash with butter.  Sprinkle with lemon zest, juice and cinnamon.
Place filled squash in shallow baking pan; pour in hot water to ¼ inch depth. Bake, covered, in preheated oven for 30 minutes; uncover and bake for another 20 minutes or until squash is tender.

The next market is Saturday, September 6 – there is no market on August 30 as the historic Saanich Fair takes over the Fairgrounds. There is a farmers-only market at the Fair managed by the Southern Vancouver Island Direct Farm Marketing Association but you need to pay to get into the Fair to access the market. We are back on September 6 and continue every Saturday until Thanksgiving (October 11).

Saanich Peninsula Flavour Trails has built a new zucchini race track and we’re testing it out before the Saanich Fair. Come on out – fun for kids of all ages. Brad Prevederos is back again to provide music. We’ll let you know later in the week what wineries will be at the market.

Beef burgers from Boughneath Farm, sockeye burgers from Captain Pete, lamb burgers from Olde Country Registered Sheep and beef smokies from Ravenstone Farm Artisan Meats. Children’s entertainer Nancy Dobbs joins “Water in the Crawl Space” at the Peninsula Country Market this week. Nancy will be singing songs for kids at 11 a.m. – be there! Nancy was the Early Childhood Educator at Countryside Preschool for many years. In 2012, she received an ”Award of Excellence” from the BC Ministry of Children and Families. We are also happy to to welcome two Peninsula winery vendors to the market, Symphony Vineyards and Tod Creek Craft Cider (new!). And with any luck, we’ll also see Sluggett Farms on the field along with the sun!

Hot news! Sluggett Farms will be at the market this Saturday with fresh-picked local corn! Still lots of fresh blueberries and raspberries. We have a special treat for kids through our Growing Families at the Market program – local author Sylvia Olsen will be on stage to spin her new tale about Rapunzel Finds a Knitting Solution (about 10:30 a.m. – time to be confirmed)! Adults will enjoy it too. She will also bring copies of her recent book “Sebastian Sasquatch”. The Rotaract and Brentwood Bay Rotary clubs will also join us on Saturday.
